Recipe makes about 30 cupcakes
- Guinness stout beer 1 cup
- Unsalted butter 16 tablespoons
- Cocoa powder, unsweetened ½ cup
- Chocolate, unsweetened 2 oz or 2 squares
- All-purpose flour 2 ½ cups
- Corn flour 2 tablespoons
- Sugar 2 cups
- Baking soda 2 tsp
- Salt ¾ teaspoon
- Eggs 2
- Sour cream 1 cup
Topping Jameson Ganache
- Bittersweet chocolate 4 oz finely chopped
- Heavy cream ½ cup
- Butter left at room temperature 1 tbsp
- Irish whiskey 3 tbsp
Butter cream frosting Bailey
- Egg whites 4
- Sugar ¾ cup
- Vanilla sugar ¼ cup
- Butter, unsalted 4 sticks
- Bailey’s Irish cream 100 ml
Instructions for making the Irish Car Bomb cupcakes
Start by preheating the oven to 350°F and line two muffin pans with some cupcake liners. Take a saucepan and start melting the butter over medium heat. Reduce the heat and add the chopped unsweetened chocolate, cocoa powder and beer while whisking together.
Remove pan from heat and set aside. Take a large bowl and combine the corn flour, salt, baking soda, and flour mixing it well. Take your electric mixer and beat together the sour cream and eggs on slow while adding the beer mixture and mixing well.
Now add the dry ingredients and while keeping on low speed, gradually mix the ingredients until incorporated. Divide the batter, fill the cupcake liners about ¾ full, and bake for 10 minutes. Once the cupcakes baked transfer to cooling rack.
Now it is time to make the topping:
Take a bowl and place the butter and chocolate in it. Take a cup and boil the cream in the microwave, remove and pour over the butter and chocolate. Leave to stand for 2 minutes, stir until thick, and add the whiskey while stirring. Place in refrigerator for 5 minutes and stir while repeating until solid with a thick chocolate consistency.
By placing your Irish Car Bomb cupcakes in the freezer for 10 minutes will help prevent your Ganache from running down the cupcakes. Take the cupcake by its bottom and dip the top section of it until the wrapper line in the Ganache and leave to cool down for at least an hour.
Now take a medium bowl and add the egg whites with a pinch of salt and whisk – add the sugar while whisking together. Place the bowl over some simmering water while whisking until all the sugars dissolved and smooth with no grittiness. Transfer mixture to the electric mixer bowl and whisk on medium for 10 minutes tripling the mixture in size. Slowly add the butter and may look curdled and mix while adding powdered sugar to taste. Add the Bailey’s cream and prevent over mixing.
